INGREDIENTS
1 Head cauliflower - steamed until soft
1 cup sharp cheddar cheese
1 tablespoon butter or coconut oil
1/4 cup half and half or plain yogurt
Salt and pepper to taste
DIRECTIONS
1) Preheat over to 325F
2) Put cauliflower through ricer, blender or food processor.
3) Incorporate all other ingredients
4) Pour into slightly greased baking pan and bake for 15-25 min until nice and hot
5) Top with a little extra cheese and some chopped parsley or chives
